Rich Moist Chocolate Cake:Gluten Free Dairy Free version

This is the most forgiving cake I have ever made. It allows and satisfies my creative urges to the core. 

This is a Very Moist, Very Rich ,Very Dark and last but not the least,Very Yummy and Very Easy to Make too . 








Possible Replacements tried and successful :
  • Oil with butter or ghee
  • Coconut Milk with dairy milk
  • Sugar can be used in powder form, crystal form or semi coarse 
  • Sugar can be replaced with date Sugar/Palm sugar 
  • Eggs can be replaced with Bananas. One egg to half a cup of mashed banana. In such a case kindly reduce the quantity of sugar to suit taste requirements.


INGREDIENTS:

  • 2 Cups Sugar  ( coarsely ground for the best color and texture)
  • 1-3/4 Cups Home Made Gluten Free All Purpose Flour 
  • 3/4 Dark Cocoa Powder
  • 1-1/2 tsp. Gluten Free Baking Powder
  • 1-1/2 tsp Baking Soda
  • 1 tsp Salt
  • 2 Eggs
  • 1 Cup  Thick Coconut Milk . ( In case of no allergy or intolerance to dairy, Usual dairy milk can also be used . For best results Full Fat milk  freshly boiled and cooled)
  • 1/2 Cup vegetable Oil (This can be replaced by liquid Ghee or Butter, in case dairy is well accepted)
  • 2 tsp Pure Vanilla Powder/Extract ( or extract of half a vanilla bean)
  • 1 Cup Boiling Water

METHOD:


  • Heat Oven to 350 degrees F/180 degrees C
  • Line two 9' round baking pans with butter paper and grease the lining with very little oil/butter/ghee
  • Stir together Sugar, Gluten Free Flour, Cocoa,  Baking Powder, baking Soda and Salt in a mixing Bowl
  • Add Eggs, Milk , Oil and Vanilla
  • Beat on medium speed of the mixer for about 2 to 4 minutes
  • Stir in the boiling water . 
  • The Batter will be very very thin. Do not worry. The Cake will not disappoint you !
  • Pour the cake batter in well lined baking pans and bake for 30 to 45 minutes depending upon individual Oven settings .
  • Check with a thin wooden skewer for the readiness by inserting in the center. when it comes out clean, the cake it done.
  • Cool well before removing from the pan. Since the pans are well lined (including the sides), there will be no broken or rough edges if allowed to cool about 10 to 15 minutes before taking it out.
